  • 1 kg Zucchini
  • 1 Small onion
  • 1 Medium potato
  • 1 Liter Vegetable broth
  • qb Extra-virgin olive oil
  • qb Salt and pepper
  • qb Grated Parmesan cheese (optional)
  • qb Chopped chives or parsley (optional)


  • Wash and cut the zucchini into pieces.
  • Peel and finely chop the onion.
  • Peel and cut the potato into pieces.
  • In a large pot, heat a drizzle of extra-virgin olive oil and sauté the chopped onion until transparent.
  • Add the zucchini and potato, stir and let it season for a few minutes.
  • Pour vegetable broth into the pot until the vegetables are covered.
  • Bring to a boil, then lower the heat and simmer for about 25 minutes, or until the vegetables are tender.
  • Using an immersion blender, blend the vegetables directly in the pot until smooth and creamy.
  • Adjust for salt and pepper.
  • Serve the velouté piping hot, garnished with a drizzle of extra virgin olive oil, some grated Parmesan cheese and chopped chives or parsley.
