Pompeo Farchioni wants to update the olive cultivation on the basis of the company claim: "the future is in our roots". The aim is a modern olive cultivation based on only Italian cultivars and able to adapt to current cultivation and taste styles. At the same time, however, we must feed our roots starting from those olive trees that have the characteristics of heroic cultivation. Present throughout Italy, but today often in a state of neglect because there are no longer the old owners who cultivated them or because it is too expensive to continue production. We are talking about over 100-year-old olive trees that have an enormous landscape value and olive trees cultivated on slopes over 30% or on terraces or in small islands or over 500 meters. From these different realities Farchioni will produce oils in self-certification as heroic olive growing.

Cooking Tips

With the help of consumers we can safeguard our history. The idea of the recovery of the heroic olive groves comes from the ancient olive grove below the belvedere of Montefalco. An abandoned forest that Pompeo Farchioni has decided to recover and put back into production starting a project of social and environmental sustainability.

CHEF’S ADVICE

Slowly heat the apricot jelly in a saucepan with 2 tablespoons of water until it comes to a boil. Turn the heat off and brush your pie with the jelly reduction: it will make your apples shiny. Let the pie cool completely before slicing it.
