Ingredients
 

  • 1 kg Courgettes
  • to taste  Coarse salt
  • 500 ml Wine vinegar white
  • to taste  Extra virgin olive oil
  • 2 cloves Garlic
  • to taste  Herbs (basil, mint, thyme)

Instructions
 

  • Wash the courgettes, dry them and cut them into 5mm rounds or slices
  • Place the slices on a cloth, sprinkle them with coarse salt and let them sit for about 3 hours.
  • Rinse the courgettes to remove excess salt and dry them well with a clean cloth or kitchen paper.
  • Bring a pot with equal parts of water and vinegar to a boil.
  • Blanch the courgettes for 2-3 minutes, then drain and cool promptly in iced water to stop the cooking process.
  • Sterilize both jars and lids by placing them in boiling water for about 15 minutes.
  • Drain the courgettes and dry them again.
  • In each jar, layer the courgettes with sliced garlic and herbs.
  • Fill the jars with extra virgin olive oil, making sure the courgettes are completely covered in the oil and pop on a lid.
  • Close the jars tightly and store them in a cool, dry place.
