Chicken breast is a great classic that every Italian family has at least once a week: it is light, versatile, quickly prepared, and can turn into a meal in minutes.
So, today we will cook a meal characterized by a fresh, citrusy flavor: lemon chicken breast.
Lemon chicken breast: some preparation tips
In order to get the best from this recipe you will need to follow a few tips:
- When you select your fresh chicken breast, check its color – it should be pinkish and have no spots or darker areas -, its smell – neutral or slightly sweet -, and its texture – firm and supple -.
- Marinating the chicken is important: do not rush it, and make sure the marinade is fully absorbed by the meat if you aim at that distinctive citrus flavor.
- Cook the chicken over medium heat: this will ensure the meat stays tender rather than drying up.
- You can customize your lemon chicken with spices; we suggest fresh herbs such as rosemary, parsley or thyme.
- We selected chicken breast for this recipe, but you can safely use any other part of the chicken!
Extra virgin olive oil is a key ingredient
Extra virgin olive oil plays a very important role in the preparation of most recipes, including this one. Here’s why:
- When combined with lemon juice it yields a healthy and tasty emulsion, ideal to marinate chicken.
- It gives the dish a distinctive, pleasantly fruity flavor that combines perfectly with the taste of lemon.
- The chicken cooks to perfection and remains light and digestible.
And let’s not forget that EVO oil is friendly to our health:
- It counteracts cellular aging thanks to the antioxidants it contains.
- It contains many “good” fats that help keep blood cholesterol under control.
- Unlike other fats, it does not weigh on the liver.
For this recipe, we decided to use Fruttato Farchioni Extra Virgin Olive Oil, characterized by a very harmonious taste and a slightly bitter finish that balances the tartness of lemon juice.
