- 400 gr Leftover pasta
- 6-8 Eggs
- 50-100 gr Grated cheese
- qb Salt and black pepper
- qb Extra-virgin olive oil

Instructions
- Beat the eggs, salt and pepper in a large bowl
- Add the grated cheese and mix until smooth.
- If desired, add spices to taste.
- Add the leftover pasta and a little EVO oil to the mixture.
- Mix well.
- Heat a nonstick skillet over medium heat with a drizzle of extra virgin olive oil spread over the entire surface of the skillet.
- Pour the pasta and egg mixture into the hot skillet and level the surface with a spatula or spoon.
- Cook the omelet for 10 minutes or until the base is golden brown and the top almost firm.
- Once the base is golden brown, with the help of a plate or lid larger than the pan, flip the frittata and cook on the other side for another 10 minutes.
- When the frittata is cooked, transfer it to a serving plate and let it cool before serving.
