PDO Riviera Ligure

Extra Virgin Olive Oil

PDO Riviera Ligure

Olio Extravergine di Oliva a Denominazione di Origine Protetta "Riviera Ligure - Riviera dei Fiori" is produced in limited quantities in the harsh, intractable land of west Liguria, where the Taggiasca olive has always been grown. The precious olives that produce this oil are harvested by hand in the old, traditional way, then selected and immediately taken to the mill to be ground. This ensures optimum preservation of the high quality of the fruit and all its genuine goodness.

Cooking Tips

It’s recommended for fish-based recipes and as a dressing in general. This is because of its special gift of not masking other flavours but harmoniously enhancing them to give every dish a different, indeed unique taste. Tips for use and preservation: Perfect for dressing salads and recommended for enhancing fish-based recipes, first courses and vegetables. Store away from sources of light and heat. Best used within the year of production.

The taste

Olio Extravergine di Oliva DOP Riviera dei Fiori is a delicate oil with a decidedly sweet feel, mildly fruity and with a characteristic aftertaste of almond and artichoke.

CHEF’S ADVICE

Slowly heat the apricot jelly in a saucepan with 2 tablespoons of water until it comes to a boil. Turn the heat off and brush your pie with the jelly reduction: it will make your apples shiny. Let the pie cool completely before slicing it.
