Apple fritters: a delicious recipe

Ingredients
- 2 Green apples
- 1 Lemon
- 30 g Brown sugar
- 200 g Pastry flour
- 200 ml Whole milk
- 1 pinch Salt
- 2 Eggs
- 1/2 sachet Baking powder
- to taste Lemon peel
- to taste Olive oil
- to taste Sugar
Instructions
- Beat eggs and sugar in a bowl.
- Add sifted flour, baking powder and milk.
- Blend the ingredients and place the batter in the refrigerator for about ½ hour.
- Core the apples, peel them and cut them into slices of about 0.5 cm.
- Sprinkle with lemon juice to prevent them from turning brown.
- Heat the oil in a large pan.
- Dip the slices into the batter.
- Fry each slice for a maximum of 2-3 minutes.
- Remove them from the oil and place them on a sheet of kitchen paper.
- Sprinkle the fritters with sugar and serve hot.
This is a typical recipe of traditional Italian cuisine, much loved by our grandmothers. It is easy, quick to prepare and everybody will love it.
Apple fritters: why fry them in olive oil?
A lot of people think that seed oil is best for frying. Wrong! Olive oil is preferable because its high smoke point makes it withstand very high temperatures without deteriorating. Moreover, it is lighter on your system and makes apple fritters more digestible.
We selected Farchioni Olive Oil because its delicate scent and fruity flavor are well suited to apples. Fritters will turn out crunchy if you dip them in sizzling oil: a delicious crust will form on their surface, preventing them from turning soggy.
The ideal temperature for oil is 150 ° – 160 °C; if you don’t have a suitable thermometer do either of the following two things:
Place a drop of batter into the oil: if it starts to sizzle and comes back to the surface, the temperature is right.
The same is true if you dip a wooden toothpick in the pan and bubbles form on its surface.
Apple fritters: preparation tips
This is not a difficult recipe, but it is important to follow a few small tricks:
We recommend green apples, such as Granny Smiths: they are juicy, tart and firm.
Slice them quite thinly so they can cook thoroughly.
Sprinkle the slices with lemon juice to prevent them from oxidizing and turning brown
Refrigerate the batter before using it: when you dip the cold, battered apples in sizzling oil a thermal shock will occur and enhance the crunchiness of your apple fritters
Add some lemon zest to the batter for additional flavor.
