Ingredients
 

  • 350 gr Spaghetti:
  • 500 gr Tomato sauce:
  • 8 tablespoons Extra virgin olive Oil Il Casolare
  • 1 clove Garlic
  • to taste Salt
  • 6 leaves Basil

Instructions
 

  • Bring water to a boil and add salt.
  • Sauté the garlic in Il Casolare extra virgin olive oil
  • Cook the spaghetti.
  • Drain the spaghetti and place it in the pan with the warm sauce after removing the garlic clove.
  • Now stir-fry the spaghetti until it is properly cooked, then add a few fresh basil leaves.

Tomato sauce: homemade is best

The prime ingredient for spaghetti with tomato sauce is “passata”, i.e. tomato purée: of course you can find it off the shelf, but it will be much tastier if you prepare it at home following a few simple steps.

If you decide to make your own delicious tomato passata here is what you need to do:

  • Buy some San Marzano tomatoes
  • Stem them, then thoroughly wash and dry them
  • Cut the tomatoes in half and remove their seeds
  • Place them in a large saucepan and let them cook over low heat
  • Stir until tender.

At this point, all you have to do is blend the sauce and let it thicken a few minutes on the fire. Your passata is ready!

Spaghetti with tomato sauce: cook it al dente!

Here are some cooking tips:

  • Spaghetti should be cooked in a large, tall pot
  • Consider at least 1 liter of water for every pound of spaghetti
  • When water boils, place a bunch of spaghetti in the center of the pot and twist it slightly, so as to allow it to open in a radial pattern.
  • Remove the spaghetti from heat about 2 minutes before the end of cooking time. Cooking will be completed in the pan along with the sauce.
